Bolla Noir: the sparkling marriage of local and international
We admit it: we are perfectionists. Not only that, we are obsessed with Ribolla Gialla: it is the object of our study, our great love. So how could we not create a fresh, sparkling and elegant marriage by combining our chosen grape with a touch of France?
We harvest the grapes by hand at the moment of perfect balance between acidity and ripeness. Made sparkling with the Martinotti method (Charmat) and aged on the lees for many months.
The nose shows floral and citrus notes; on the palate it gives citrus freshness with an extraordinarily elegant character.
Description A fresh and elegant sparkling wine, perfect for an aperitivo and suitable for the whole meal.
Vinification The wine is re-fermented at a low controlled temperature, in order to preserve the primary aromatic components, with a pressure of 5,5 atmospheres. The wine is made sparkling with the Martinotti method (Charmat) and aged on lees for many months.

Food pairing Perfect for an aperitivo, Bolla Noir has a good structure and a good acidity that make it suitable for the whole meal.
